fov feeling vs accuracy

What's more important, to have an accurate fov like 90 hfov across most games even if it doesn't feel like it's the exact same fov due to some other factors, or should you just stick with the same fov values due to it being the same?

The question doesn't really make a lot of sense as it is written, but I think you are suggesting whether to just always maintain the same number?

That only has any value if the measurement used per game is the same which they sometimes aren't. 90 Vertical FOV feels totally different to 90 Horizontal 4:3 as does 90 Horizontal 16:9, and games can also use slightly different rotation methods where the camera pivot point is decoupled from the camera view (such as third person games, even some first person games do this a little bit) which also changes the way sensitivity feels at any FOV.

Basically, you should match up the FOV type and then try and get that as close as possible- thankfully the calculator can do this for you very easily for most games that have the option to do so.

I mean even when the values are maintained some games just have different factors that make it "feel" different and I was wondering if I should pursue it or go with the feeling?

Those "factors" are either impossible to quantify or not even configurable normally, just differences in game design. Having a different movement speed for example can make aiming feel totally different in otherwise the exact same game and settings.

At the end of the day you aim by hand-eye co-ordination and the tools to "match" things are merely the "means" to get to the "ends" which is that it feels easier to adapt to from a different game and more correct for you. There is no objectively measurable correct application so if in one game it feels better to have a faster sensitivity or lower FOV than another game as opposed to matching them by a certain set of identifiers then that is absolutely what you should do.
